Cacao Chia Avocado Pudding

This velvety chocolate dessert tastes SOO good that you’d never know thats its good for you!!  I’m a bit of a superfood enthusiast …so this recipe had my name all over it.

It’s made with simple wholesome superfood ingredients and is so easy to make.  Even the most inexperienced of cooks…aka ME…can prepare it with absolute success.

Now, don’t go running scared from this recipe.  I know the combo sounds bizarre but it is actually amazing. The avocado gives a creaminess to the pudding and is literally undetectable. The Chia seeds give a nutritional boost and the Cacao…well, we all need a little chocolate in our lives!

Ingredients:

  • 1¼ cup coconut milk

  • 3 Tbsp maple syrup

  • ¼ cup chia seeds

  • 4 Tbsp cocoa powder

  • 1 Avocado

  • pinch Himalayan salt

  • Topped with whatever takes your fancy.

Lets do it:

  1. Mix all ingredients {except the avo} together in a mason jar/sealed container.  Shake and store for a few hours or preferably over night in the fridge.
  2. Empty the mix into a high speed blender with the avo and blend until a smooth mousse constancy.
